Mango Ginger Spring Rolls

Recipe

Makes 1 Serving (2 spring rolls)

Ingredients-

Rolls:

1 cup Sticky rice

2 sheets Rice paper

1/2 cup Fresh Mango

1/2 cup Fresh Ginger

1/4 cup sliced Carrot

1/4 cup Mint Leaves

1 tbsp Chopped Cilantro

1/2 tbsp Sesame Powder

Sauce:

1/2 tbsp Agave oil

1 tbsp Soy sauce

1 tbsp Chunky peanut butter

1/2 tbsp Chili sauce (or hot sauce of choice)

1/2 tbsp Light brown sugar

1 tsp Ginger (powdered)

Steps:

Prep roll ingredients by chopping and cooking sticky rice. Set aside and section on cutting board.

Fill a lip-edged plate or frying pan with water. Dip the rice paper in the water so it is just submerged, promptly remove and transfer the rice paper to another plate. Do not dunk rice paper for more than 4 seconds. It will become very sticky and fickle. It should be firm when transferred.

On wetted rice paper, add sticky rice and other fillings as desired. Keep ingredients away from edges, focused in the center to avoid tearing.

Cover with the softened rice paper, folding over the ingredients as you would a burrito.

For sauce:

Combine agave oil, soy sauce, peanut butter and chili sauce. Microwave for 20 seconds. Mix well and add brown sugar and ginger.

Plate and enjoy!
